How to Make Crock Pot Bacon Mushroom Swiss Chicken

Psst… Cris here… WE LOVE this recipe too. So much so that Mikey made a cooking show video for it AND a quick cooking video!

Michael loves mushrooms. I do not (unless you are talking about morels!).

It would have been SO easy to just make this a bacon Swiss chicken, but I know how much Michael loves these flavors combined, so I had to try this Crock Pot Bacon Mushroom Swiss Chicken from Gooseberry Patch’s Everyday Slow Cooker.

If you have a picky eater in your house, let them know that this picky eater still enjoyed this recipe thoroughly. (I may or may not have picked out the mushroom chunks in mine…I’m not tellin’! ???? ) The melty Swiss combined with the yummy bacon…and okay, the flavor of the mushrooms…were awesome with the chicken!

Ingredients Needed

3 slices of bacon crisply cooked, crumbled and drippings reserved
6 boneless skinless chicken breasts
4 oz can sliced mushrooms drained
10.75 oz can cream of chicken soup
6 slices of swiss cheese

  • I used Cera ( my6 Quart Crock Pot with Ceramic Coated Pot) for this one. I like to use a non-stick pot when I’m working with cheese to make clean up a snap. Your favorite 5-6 quart crock pot will work just fine. 🙂

Instructions

  • Pour your reserved bacon grease in a skillet and heat up over medium heat

  • Place your chicken breasts in the warmed grease and cook for 3-5 minutes until slightly golden (turning once)

  • Spray your crock pot with cooking spray

  • Put your chicken in your crock pot

  • Cover with your mushrooms

  • Pour your soup in your skillet, warm through, then pour over your chicken

  • Cover and cook on low for 4-5 hours, check with a meat thermometer to know when the chicken is done

  • Place a slice of Swiss on top of each chicken breast, sprinkle with bacon, turn heat up to high and cover and cook for 10-15 minutes more until the cheese is melted

    I added some garlic powder and black pepper to the soup, my husband is not a fan of things that are super cheesy so I only used half the amount of cheese. Super tasty!

    I am before the trying it out for the 1st time stage. Like most cooks, we have to change almost all recipes to what we are feeling. I’m feeling this: take chicken out put cheese on top and broil until crispy and brown (to your liking as how long). The sauce, add baby spinach with the mushrooms (I can’t do can so mine will be fresh). Hey it’s a 105*+ at dinner time so one less pot to clean, to cook. Tomorrows will shall see/taste the final result…

    This is wonderful!!! I sprinkled the chicken, after browning, with ranch dressing mix, used fresh sliced mushrooms and added a bit of onion – totally delish!!!

    Baby Swiss cheese is not aged for very long, and so it is milder which some people prefer also its less hole-y and milder than triditional Swiss Cheese which has a buttery slightly nutty flavor 😉

      I have not tried this out in my casserole crock pot yet, so I can’t say for sure how the timing would chance. You will want to try it out the first time when you can keep an eye on it to know how your casserole crock cooks it and how the timing needs adjusted. Enjoy!

      Hi Brea-
      This recipe might best be tried on a weekend. I am afraid cooking it for 7+ hours might result in an overcooked meal. If you want to give it a shot for a longer time, you could put a baking dish inside your slow cooker and fill the dish with the recipe. Then, pour water into the crock until it hits about halfway up the outside of your baking dish. That method may buy you some time. I would still recommend cooking it the first time that way on a weekend when you can watch it to see how long it takes though. Hope that helps!
