I created this homemade blueberry syrup recipe as part of a sponsored post for R.W. Knudsen® Just Juice™.
Is there anything more scrumptious than blueberry pancakes drenched in homemade blueberry syrup on a Sunday morning? If there is I can’t think of it right now! However, I must confess that I am not a huge fan of plain pancakes. But add a cup of blueberries to that pancake batter and top it with blueberry syrup and you transform something ordinary into something extraordinary.
How to Make Blueberry Syrup
Blueberry syrup is easy to make. There are several variations, but you only need a few ingredients: fresh or frozen blueberries, unsweetened blueberry juice, and sugar or honey. If you want a thicker consistency to your blueberry syrup you can add cornstarch. Yes, I know most blueberry syrup recipes call for water, but I have found that usingR.W. Knudsen Just Blueberry Juice, which as its name implies is just juice without any additives or sweeteners, gives the syrup a richer, bolder blueberry flavor. Using Just Blueberry Juice also reduces the amount of refined sugar needed to sweeten the syrup.
Do you leave the blueberries in the syrup or strain them out? That is a personal decision. I personally like to grind the blueberries up with an immersion blender and leave them in the syrup. If you prefer a super smooth syrup, then you can strain your syrup through a fine sieve before serving.
How to Use Blueberry Syrup
While most of us think of blueberry syrup as “blueberry pancake syrup”, you can use it for more than just pancakes, waffles, and french toast. Blueberry syrup is delicious served over ice-cream, angel food cake, crepes, scones, and trifles. You can also use it as a glaze over a bundt cake.
Homemade Blueberry Syrup Recipe
Ingredients:
- 2 cups frozen blueberries, thawed
- 1 cup R.W. Knudsen® Just Blueberry™ Juice, divided
- 1/3 cup sugar
- 1 tablespoon cornstarch
Directions:
- In a small bowl, whisk 1/4 cup of blueberry juiceinto the cornstarch. Whiskuntil completely blended and lump-free.
- Add blueberries, 3/4 cup blueberryjuice, and sugar to a medium saucepan. Stir to combine. Cook over a medium-high heat until it reaches a boil.
- Then lower flame, stir in the cornstarch mixture, and simmer over a medium to medium-low flame for 7 minutes or until sauce thickens.
- Carefully use either a blender or an immersion blender to grind up the blueberries.
- If the syrup is too thick, you can add more blueberry juice 1 tablespoon at a time until you reach the desired consistency.
- If your family does not like the chopped up bits in the syrup, you can pour it through a sieve before serving.
Blueberry Syrup Variations:
Cinnamon Blueberry Syrup Recipe
Add 1/2 teaspoon cinnamon to the blueberries. This gives a light cinnamon flavor that actually enhances the sweetness of the blueberrysyrup.
Lemon Blueberry Syrup Recipe
Add 2 teaspoons of lemon juice and 1 teaspoon of lemon zest to the blueberries. Increase the sugar to 1/2 cup. This provides a light tang to the blueberry syrup that brightens the flavor.

I went to make some more blueberry syrup this morning and found that my kids had polished off the Just Blueberry Juice. And that is a good example of why I feel good about having Just Juice in the fridge – the only ingredients in the bottle of blueberry juice are filtered water and blueberry juice concentrate.
