How to Make Cheesy Chicken and Rice in a Crock Pot

One of my favorite things to order when I go to a Mexican restaurant is the Cheesy Chicken and Rice. When I made my Crock Pot White Queso Dip, it got me to thinking. Then I made this yummy Easy Crock Pot Shredded Taco Chicken recipe. I put them together with some Spanish rice and had my favorite meal right at home! I thought about it too late, but the Crock Pot Spanish Rice Cris shared would be perfect for this recipe and take it to a whole new level! So, you can make this with either a packaged Spanish rice or pop up the flavor with Cris’ recipe. You will simply prepare all three recipes and layer them with rice on bottom, then chicken and top with the cheese! So yummy!

Below you will see lists for everything you will need for all three recipes, so don’t let the length of the lists scare you away from this dish. It really isn’t hard to throw all these recipes together. The result is awesomeness! You are going to love it!

What You Will Need

Ingredients Needed

  • 1 lb boneless, skinless chicken
  • 1 oz taco seasoning packet
  • 1/2 cup chicken broth
  • 1 lb white American cheese
  • 1/2 cup milk
  • 1 tablespoon butter, sliced
  • 4 oz can chopped green chiles, drained
  • 1 cup Half and half
  • 1/2 cup mozzarella
  • 1 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1/4 T ground red pepper (or more to taste if you want it spicier)
  • 1CupLong Cooking RiceLong Grain- uncooked
  • 1CupWater
  • 1Onionchopped
  • 1Green Bell Pepperchopped
  • 1CloveGarlicminced, or 1/4 tsp Freeze Dried Garlic
  • 1tspChili Powder
  • 1tspGround Cumin
  • 1/2tspSalt
  • 14.75ozCan Diced Tomatoes with Lime Juice and Cilantro

Equipment Needed

  • Measuring cup
  • Two Forks or stand mixer (This is for shredding your chicken. You can do it by hand with two forks or put your chicken in the bowl of your stand mixer and use the paddle to shred your chicken.)
  • Cutting board
  • Sharp knife
  • Can opener
  • Measuring spoons
  • Wooden spoon
  • 4 quart slow cooker (You will need two 4 quart slow cookers.)
  • 6 quart slow cooker

Time Needed

  • Chicken Prep Time: 5 minutes or less
  • Chicken Cooking Time: 3 to 4 hours on low or 1.5 to 2 hours on high
  • Chicken Additional Time: 5 minutes to shred your chicken
  • Queso Dip Prep Time: 7 minutes
  • Queso Dip Cooking Time: 45 minutes to 1.5 hours on high (This depends greatly on how your slow cooker cooks. Mine cooks hot, so it was done in 45 minutes. If your slow cooker cooks cooler, it will take closer to 1.5 hours.)
  • Rice Prep Time: 5 minutes
  • Rice Cooking Time: 1.5 hours on low

Ingredients

  • 1 lb boneless skinless chicken
  • 1 oz pkg taco seasoning
  • 1/2 cup chicken broth

Instructions

  • Put your chicken in the bottom of your 4 quart slow cooker.

  • Pour your broth over your chicken.

  • Sprinkle taco mix on top of everything.

  • Cover and cook on low 3-4 hours or high for 1.5-2 hours.

  • Shred your chicken with two forks or a stand mixer.

  • Add tomatoes over rice.

Notes

Rice is not a fix it and forget it ingredient in the slow cooker. Cooking times are just a basic guideline. Watch rice recipes closely when you first try them to make sure they don’t cook unevenly or burn in your slow cooker. Stir rice dishes regularly if you see signs of uneven cooking in your unit.
